fix(release): bump version to 2.8.0 and resolve latest without the GitHub API - #317

…tHub API The version bump commit was lost when the history was rewritten, so the frontend shipped in the v2.8.0 release still self-reported 2.6.52. Bumps app/server/landing package.json and the Go default version. deltos-update.sh now resolves the latest release from the releases/latest redirect (no GitHub API quota: the server IP is datacenter-shared and got 403 during the in-app update) with an optional GITHUB_TOKEN fallback.

Two fixes surfaced during the v2.8.0 production swap:
Both verified: the release tarball layout is unchanged, script syntax checked, and the updater was exercised against production during the swap.
